‘Bajee’ the word is often miss understood as being  deep fried i.e. ‘onion bajee’ but the true description would be fairly  dry cooked in oil with onion and light spice.

This dish is best cooked in a stir fry pan (non-stick if available) accompanied with a lid.

1. Gently heat the oil in the pan.

2. Add the chopped onions, pepper and the tomato with some salt and cook to soften (stirring regularly).
3. Add the Mr Huda’s Universal Curry Paste, and the turmeric and cook for 1-2 minutes (stirring regularly).
4. Add the mushrooms and the coriander, stir and then  leave to gently simmer (covered) and stirring occasionally for 10-15  minutes or until the mushrooms are just cooked (try not to over cook).
Tips: if you require this dish to be a little spicier simply add some sliced green chilli’s or chilly powder when adding the paste.
