Bubble & Squeak

300g of left over sunday lunch type cooked veg (I used sprouts and carros but you could use anything like leeks, cauliflower, swede..onions…cabbage..that kind of thing)

400g cold mashed potato

4 tsp of Mr Huda’s Universal Curry Paste, I found either the Bajee or Universal paste worked best in this dish.

A little salt and pepper

Curried Bubble and squeak cakes
A perfect way to use up Sunday Lunch Overs…

Prep time…5 mins

Cooking time….10 mins

Makes…..6 bubble and squeek cakes (about the size of a fish cake..)

Put the leftover vegetables into your food processor and pulse until the vegetables are chopped roughly but not pureed.

Tip them into a mixing bowl, add the mashed potato and Mr Huda’s curry paste of your choice and mix well toether so the curry paste is evenly distributed throughout the mix.

Divide the mix into six equal portions and mould them into a fishcake shape.

Heat the oil in a non stick frying pan and shallow the fry the bubble and squeak cakes for about 4-6 minutes on each side, until they are golden brown. Be careful not to get the oil smoking as it will makes the cakes taste bitter if it burns.

Serve with sliced cold meat left over from the joint(if you have any), salad and some mint and tamarind dressing made with Mr Huda’s Mint and Tamarind spice mix.

Could be a regular Monday night tea…..
