Pilau Rice

INGREDIENTS: 

700g basmati rice,

1 medium onion (150g),

1/2 tsp turmeric,

2-3 bay leaves,

2-3 cinnamon sticks,

3 tbsp butter ghee
(use just butter if not available)

Sweet Curry Roasted Veg – Serves 4 to accompany a main course
Delicious and easy to prepare. Compliments any curry dish. Pilau rice has been cooked with various methods and ingredients. This method is quick and simple, basmati rice with ghee and added cinnamon, cardamom and onion. 

1st stage
1. Wash the rice and put in a fairly large sauce pan.

2. Add the bay leaves, cinnamon, turmeric and a little salt.

3. Add around 1 litre or above of water and gently boil until rice is cooked (press few grains of rice to check if centre is cooked).

4. Once cooked drain any excess water and leave aside.

2nd stage
1. Gently heat the ghee in a frying pan. 

2. Add the finely sliced onion with a little salt and cook until golden (stirring occasionally).

3. Once cooked add to the rice and mix.

4. Leave to stand (covered) for 5-10 mins before serving.
