INGREDIENTS:

600g Potatoes (this is about 2 large ones)

½ onion finely chopped

1 beaten egg

Salt and Pepper

1 tbsp plain flour (or rice flour to make the dish gluten free)

3-4 teaspoons of Mr Huda Balti or
Universal Curry Paste.

 

CURRIED POTATO ROSTIS - Serves 6

Scrub the potatoes and boil in their skins for around 12-15 minutes, or until they are only just cooked but not too soft. Leave to cool.

Once cool enough to hand peel them and grate them on a coarse grater into a bowl, add the chopped onion, Mr Huda's Paste, salt and pepper, egg and flour. Stir gently to mix the ingredients evenly.


 

Divide into about 6 portions shaped like
patties. Heat a couple of tablespoons of oil in a non stick frying pan and gently fry each both sides until golden brown, put on a baking tray and bake in the oven at 180 C for approximately 15 minutes.
